Total Cook Time: 20 minutes
Ingredients:
- Chickpeas 1 can (Organic, BPA Free, GMO Free)
- Sweet Potatoes- 1 Medium & Sliced Thin
- Kale– 1 1/2 cups
Spices: Curry, Salt, Pepper, Paprika, Minced Garlic, Garlic Powder, Cayenne Pepper, Onions
Instructions:
Chickpeas:
- Rinse the chickpeas off
- Place in a sauté pan with about 1 1/2 tbsp EVOO
- Add Curry/Salt/Pepper/Garlic Powder/Onion/Paprika
- Cook for 10-15 minutes over medium heat
Sweet Potatoes:
- Clean off the sweet potatoes
- Slice thin or thick rounds…. I choose thin this time around
- Place on a baking sheet and brush with EVOO
- Add Salt/Pepper/Paprika/Garlic Powder
- Bake in 350 degree oven for 10 – 15 minutes (check often)
Kale:
- Sauté minced garlic and onions in 1 1/2 tsp of EVOO
- Add kale to sauté pan
- Add Salt/Pepper/ Pinch of Garlic Powder
- Cook for 5 -6 minutes
